Substitute anything you can't get or don't like
List of Ingredients
- 2 tsp macadamia oil
- 1/2 tomato, finely chopped
- 1 lge flat mushroom, halved then sliced
- generous handful of rocket. Half of it finely chopped and half as it
- salt and pepper to taste
- mixed herbs (dry if you don't have something growing)
- 1 gluten free English muffin (or use toast)
- sundried tomato and black olive tapenade (or use a different spread)
Instructions
- Heat pan. Add oil and tomato. Season well. Add mushrooms and stir quickly over high heat.
- Reduce heat to low and five it 2-3 minutes (use the time to toast muffin and/or put some coffee on)
- Increase heat back to high. Stir in chopped rocket and stir vigorously for 30 seconds. After this add in whole rocket and give it another 3 seconds (so the last rocket wilts slightly but does not overcook)
- Turn off heat. Add more pepper if desired.
- Spread tapenade on the toasted muffin and pile vegies on it. Good with fresh juice or coffee.
Final Comments
For dinner I would replace the toast with a serve of buckwheat, rice or quinoa and maybe have a green or beetroot salad on the side.
