    Mung beans for brekkie

    Source of Recipe

    made it up

    Recipe Introduction

Ok so this doesw not really have to be for breakfast. It's nice any time of day

    List of Ingredients

    • Dried mung beans (about 1 cup)
    • water
    • 1-2 tbs turmeric powder
    • 1-2 tbs veggie stock powder
    • crushed chili (the one you get from a jar or a sambal) to taste
    • squeeze of lemon (optional)

    Instructions

    1. Soak mungbeans overnight or even longer (mine were 24 hours)
    2. Drain and add fresh water to cover them and then some (be generous, maybe 2cm over the beans). Add turmeric powder and stock powder. Bring to boil
    3. When boiling cover and turn down to low. Cook for 20-30 minutes but careful not to burn bottom or let them dry out.
    4. Spoon required amount into your bowl, add about 3/4 tsp chilli and a squeeze of lemon (salt is optional)

    Final Comments

You'l; want to eat the whole lot straight away but they make good leftovers (jaffle fillings, with sweet potato in patties, etc).

It's really no weirder than porridge for breakfast when you think about it
