    Recipe Introduction


    serves 2 (or one glutton but now my stomach hurts) I was going to use half for leftovers. Substitute spices any way you like (though the turmeric gives it an appetising colour)


    List of Ingredients


    • 1/2 a block ( 250g) tofu (or a little less
    • 1 1/2 tsp turmeric
    • 2 tbs soy sauce
    • 1 tsp dukkah (optional)
    • 1/4 veggie stock cube
    • sprinkle each of paprika and celery salt
    • sprinkle each dried thyme and dried basil
    • 2 cloves garlic
    • 1-2 tbs sesame seeds (optional)
    • 1 spring onion (finely chopped)
    • 1 boiled or microwaved potato, roughly chopped
    • 6 cherry tomatoes halved or sliced (can use one large chopped tomato instead)
    • 2 kale leaves (stalk removed and very finely chopped)
    • handful greens (I used a mix of baby spinach and baby beetroot leaves)
    • 1/3 cup frozen corn
    • 2 tbs seed mix (I used "seed delights" toasted sunflower seeds, pepitas and slivered almonds
    • Olive oil


    Instructions


    1. Wrap tofu in a clean teatowel and put under a weight (saucepan full of something) for 1/2 hour.
    2. Crumble tofu and mix through turmeric, crumbled stock cube, soy sauce, dukkah, paprika, celery salt, herbs.
    3. Heat frypan or grill. Add oil and fry potatoes until they just begin to turn a little bit golden. Add spring onion, garlic, corn and mix well.
    4. Add all other vegies and seeds and mix until leaves just begin to wilt. Add in tofu mixture and mix well so that everything becomes scrambled together.
    5. When it is all heated through serve.


    Final Comments


    Leave out whatever you don't like. Add any veggie you like. Some I might try are capsicum, mushroom,pinenuts, sultanas. If you don't add potato and corn you might want to serve with toast.
