Blackbean brownies

List of Ingredients
- 15 oz can (1 3/4 cup) black-beans, well-rinsed and drained
- 2 large flax eggs (2 tbs ground flax seeds soaked in 6 tbs water)
- 3 tbs coconut or macadamia oil
- 3/4 cup cocoa powder
- 1/4 tsp sea salt
- 1 tsp pure vanilla extract
- 1/2 cup raw sugar
- 1 1/2 tsp baking powder
Instructions
- Preheat oven to 350F. Grease muffin tin (but not mini)
- Combine flax and water. Rest for a few minutes.
- Whisk or food process all ingredients together (mash beans. This needs to be really smooth)
- The consistency should be slightly runnier than frosting. Add 1 tbs water if needed, make sure you don't overdo it.
- Distribute into muffin tins, smooth tops with spoon or fingers.
- Bake 20-26 minutes until the top is dry
- Remove from oven. Cool 30 min in pan before gently removing.
- Store in the fridge in an airtight container.
Final Comments
Before baking you could sprinkle with choc chips or walnuts if you liked.
