    Serves 4 as main with sides

    List of Ingredients




    1-2 blocks tofu, sliced

    1 onion, very finely chopped

    5 garlic cloves, very finely chopped

    large lump of ginger, very finely chopped

    1-2 red chillis very finely chopped

    1 lge or 2 smaller tomatoes, very finely chopped

    salt,

    1/2 tsp cumin (optional)

    2 tsp satay chilli paste (or similar - optional)

    ghee or olive oil

    1 tsp mustard seeds (optional)

    Recipe



    Heat oil, add in mustard seeds, when they start popping add onion, garlic, ginger and chilli (make sure heat is on low)

    Stirfry until fragrant and add spices and tomato. Allow to very slowly cook down a bit then add in tofu and just stir through until warm.

    Can be served staright away but best next day (so flavours have soaked in)

    Serve with rice or potato or on gluten free toast
