    makes about 1 cup. I tend to get 1-3 eggplants (depending on size) slice them and grill or deepfry them. If I want more acid in the flavour I add balsamic vinegar


    List of Ingredients


    • 290g jar marinated eggplants (or preferably see above)- halved eggplants deepfry quite well
    • 1/3 cup tahini (sesame paste)
    • 2 tbs lemon juice
    • 2 cloves garlic (optional)


    Instructions


    1. Process until smooth and serve with snow-peas, carrot sticks, celery, capsicum, gluten free crackers etc
