    List of Ingredients


    • 500g coliban potatoes, peeled and cut into pieces
    • 10 (not a typo) cloves garlic- peeled and crushed
    • 1 tbsp salt
    • 1 cup good quality extra virgin olive oil
    • 50ml white wine vinegar


    Instructions


    1. Place potatoes in saucepan, cover with water and cook until tender. Drain and mash.

    2. Process with garlic, salt and vinegar. Beat well. Slowly add olive oil, and continue beating until well mixed.





    Final Comments


    Garnish with rosemary. Serve with gluten free grissini or bread, or with raw vegetables accompanied by black olives
