White Bean Dip

List of Ingredients
300g cooked or canned cannelini beans
2 tbs chopped parsley
1 tbs olive oil (a good one as you will taste it) + 1tsp extra
salt and pepper
1 small red onion, chopped
2 cloves garlic, chopped
juice of 1/2 lemonRecipe
In food processor process beans, onion and garlic until smooth. Add parsley. oil and lemon juice. Process about 10 seconds until well combined. Season to taste.
Spoon into serving bowls. Cover and refrigerate until ready to serve. Just before serving drizzle with extra virgin olive oil (if you like)
