Recipe Introduction
I will list all the vegies I sometimes use and you just have to pick 3 or 5 or however many of them you like to use. Add plain or marinated tofu too if you like
List of Ingredients
- vermicelli (prepared by soaking in boiling water)
- bowl of hot water (not too hot)
- Avocado slices
- Snowpeas, sliced lengthways
- Cucumber sticks
- Beansprouts or other sprouts
- shredded lettuce or baby spinach
- rocket
- grated carrot
- grated beetroot (hard work)
- finely sliced celery
- sliced tomato (in julienne slices)
- very finely shredded cabbage or brussels sprouts (yes raw)
- sliced mushroom (raw or cooked)
- sliced spring onion (or red onion)
- Sweetcorn kernels
- sliced capsicum
- fresh coriander
- fresh mint
- sauces of your choice (gf soy or hoisin I use)
- crushed peanuts (optional)
- coldroll wrappers (from Asian section of supermarket)
Instructions
- Prepare vermicelli and all vegies.
- Each person takes a wrapper quickly swirls it through the bowl of hot water and starts working with it while it hasn't softened completely (or it falls apart if you soften it too much)
- Pile on whatever combination of vermicelli, herbs and vegies you want, add a bit of sauce and nuts and wrap up
- OR...you can make them ahead and take to picnics etc.
