    Large Beetroot Salad

    Recipe Introduction


    You can vary it. If your beetroot doesn't have leaves (or even if it does) use baby spinach, rocket, coriander, parsely, nasturtium leaves, lettuce, kale, basil, broccoli, long beans or any other good green! If you dont have sweet potato use pumpkin. If you don't have quinoa use brown rice. Change as you like!


    List of Ingredients


    • 1 bunch beetroot and leaves
    • 1 lge sweet potato
    • olive oil
    • 1 cup quinoa
    • juice and rind of 1 lemon
    • 2 tbs olive oil
    • salt and pepper
    • cinnamon (optional)
    • wholegrain mustard
    • 1 bunch mint leaves
    • 1 pckt walnut or almond crumbs (optional)


    Instructions


    1. Peel and cut sweet potato and beetroot, drizzle with oil and roast.
    2. Prepare quinoa in boiling water.
    3. Mix together juice and rind of lemon, 2 tbsp olive oil,salt, pepper, mustard, cinnamon
    4. Cool quinoa and vegetables. Cut vegetables in small pieces. Soak leaves in iced water while vegetables cooking and now shred with mint.
    5. Toss beetroot, sweet potato, quinoa, mint and nuts with the dressing and let flavours infuse in the fridge overnight or a couple of hours. Serve as main or side dish


    Final Comments


    Can add garlic or spring onion if desired
