You can leave out or substitute anything you don't like or don't have. Leftovers make a good lunch at work next day
I didn't use beansprouts but I think they would be good added with the cabbage

List of Ingredients
1 onion
1 carrot
1 tbs creamed coconut
1 tbs olive oil
1/2 chilli deseeded and finely chopped
8 small mushrooms
1/2 cup cashews
pinch black salt
sprinkle black pepper
sprinkle 5 spice powder
cooking sake
soy sauce
2-3 cups leftover brown rice
3/4 cup peas (I used frozen)
1/2 cup shredded cabbage (white or purple)
1/2 cup spinach or beetroot leaves or rocket (or a mix)
a few drops sesame oilRecipe
Chop onion and carrot finely.
Heat oil and creamed coconut and saute for 2-3 minuts until veggies start to soften.
Add chili and mushroom, stir through and add black salt, pepper and 5 spice powder (or whichever ones you are using). Stir well. Add cashews and stir constantly
Make sure heat is right up and splash in some cooking sake. Stir well and add soy sauce. Cook for about 2 more minutes until mushrooms collapse a bit.
Add rice and peas and stir another 2-3 minutes to heat through. Add more soysauve if wanted (or water) and add in cabbage and leafy veg. Stir for one more minute.
