Lentil Tacos

Recipe Introduction
This makes a lot of filling. Use leftovers in gluten free pastry for sausage rolls OR eat with quinoa or brown rice, top baked potatoes with it or just freeze it for a day you don't want to cook. It's a cheap big lot of food (can use for soup kitchens, camps and stuff too)
List of Ingredients
- 1 cup dried red lentils
- 1 onion
- 1 stalk celery (or more)
- 3 carrots
- 3 leaves kale (or more)
- 6-8 cloves garlic (too much garlic is what makes it yummy)
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cayenne pepper (less spices if you are a wuss)
- 1 tbs veg stock powder
- 2 tins tomatoes (chopped)
- 1/2 tsp celery salt
- other vegies instead or as well if you like (see suggestions below)
- 4 taco shells
- medium taco sauce (as much as you like)
- olive oil (can use other)
Instructions
- Pour water over lentils to cover them (+ 5mm). Leave overnight or all day while you go to work (or both)
- Dice onion. Finely chop 1/2 the garlic. Heat oil in electric pan. Add onion and garlic. Stir.
- Add finely diced carrot and celery (can be grated if you prefer). Stir well and let it become fragrant. Stir well as you add the spices and the other half of finely chopped garlic.
- Add both tins tomato and the soaked lentils (drained and well rinsed). Add stock powder and one cup water. Add the kale.
- Cover. Let simmer for about 15 minutes (yep that is all). If the lentils are too dry add more water but hopefully you will get a thick mixture with softened lentils and minimal liquid.
- Microwave the taco shells (if you have the luxury of a decent oven use that instead. Spoon lentils into taco shells, top with sauce and enjoy.
Final Comments
Other vegies could be - kidney beans, zucchini, corn, mushroom, cauliflower or whatever you like
-can serve with any optional toppings such as vegan cheese, soy yoghurt, guacamole, corn salsa, hell any salsa, lettuce, tomato, rocket, coriander, jalapenos etc. But I had bugger all at home and they were even good plain.
