Quick Asian style mince bowl

Leave out anything you hate or are allergic to.Add more veg (eg grated carrot and zucchini, finely chopped cauli).
If you don't like fake meat use brown lentils (cooked) or a mix of crumbled firm tofu, walnuts, minced mushrooms....or TVP. So many possibilities.
Anyway I will always add mushrooms when I make it
List of Ingredients
- 2 tbsp olive or coconut oil (or whatever you cook with)
- 1 tbs ginger, finely chopped or grated
- 2 garlic cloves, crushed
- 2 spring onions, thinly sliced
- 400g plant-based mince (eg V2 or Beyond...but honestly any you like)
- 1/4 cup teriyaki sauce
- 1 long red chili, finely sliced
- cooked rice for 4 people
- 1 small red onion, thinly sliced
- 1/2 bunch coriander, leaves picked
- 1 lebanese cucumber, thinly sliced
- 1/2 bunch mint, leaves picked
- 125 bean sprouts
- 1/3 cup fried shallots
Instructions
- Heat oil in large frypan over med-high heat. Add ginger, garlic and onion cook stirring 1 minute until fragrant
- Add mince and cook stirring to break up lumps and mix flavours, for 3 min until browned.
- Add sauce and chilli. Cook 1 minute to mix flavours and heat through.
- Divide hot rice between bowls. Top with mince mixture, onion, corianger, cucumber, mint, bean sprouts and shallots. Serve.
