    Recipe Introduction


    You can vary this in all sorts of ways, then use it on tacos, nachos, baked potatoes, rice or quinoa or even on bread. My son just eats it out oif a bowl by itself.


    List of Ingredients


    • 1-2 onions, chopped finely
    • 1 celery, sliced finely (optional)
    • 1/2 -1 capsicum, sliced thinly (optional)
    • 2 cups beans soaked for 8-12 hours and then boiled in salted water for an hour or 2
    • 2-6 garlic cloves chopped finely (I like a lot)
    • 1 bayleaf
    • a splash of wine (dry red or white- optional)
    • 1 400g thin chopped tomatoes
    • 1-2 chillis- remove seeds and chop finely
    • salt


    Instructions


    1. Make the beans ahead and have them (cooled).
    2. Heat some olive oil, add bayleaf, onion, garlic and salt (this is the place to add capsicum and celery if using). Stir and cook until fragrant and transluscent.
    3. Add tomatoes and cook on high for 1-2 mins. Add the wine and let it boil off.
    4. Add beans. If the mix is too dry add some of the bean water as well (otherwise freeze it to use for stock or discard it). Use a potato masher to mash the whole mess adding salt to taste (or cheat by putting it in you food processor which is awesome until it is time to wash the machine)
    5. serve with whatever you like (flat bread, chips, salad, salsas, etc)


    Final Comments


    Mash some avocado (roughly) with a hint of salt and a squeeze of lime. If you have coriander leaves add them. Goes well over the top of refried beans no matter what you eat them with
