    List of Ingredients


    • 1 head broccoli, steamed or lightly boiled
    • 6 mushrooms, sliced
    • 1/3 capsicum, sliced
    • 1 spring onion, thinly sliced
    • 1 serve vegan instand pad thai (ie noodles in a cup- I used Right Foods, Dr McDougall's)
    • a squeeze of lime (optional)


    Instructions


    1. While steaming the broccoli, add boiling water to the pad thai.
    2. In a hot saucepan, wok or electric pan combine mushrooms, capsicum and broccoli. Add in noodles.
    3. Stir adding sliced spring onion. Finish with lime and coriander of desired.


    Final Comments


    You could mix up the veggies. Try bean sprouts, bok choy, thinly sliced carrot, cabbage, corn or even tofu as an addition or swap. Garnish with fresh coriander if you like.
