    serves 4 (may need a salad or dessert as well) or 3 greedier. Or 1 for several days.

    If you don't have taco seasoning try 1 tbs cumin, 1 tsp coriander, 1/2 tsp onion salt, 1/2 tsp celery salt, 1/2 tsp chilli powder or sweet paprika- leave out whichever you don't have or use plain salt)

    List of Ingredients




    1 pack taco shells (12 shells)
    1/2 large eggplant
    6 medium mushrooms
    1 large carrot
    1/4 cup olive oil (or something...a lot...this is greasy food. Make it less greasy if you want)
    1 tbs taco seasoning
    1/4 cup red wine (optional)
    1/2 jar leftover pasta sauce (or 1 tbs tomato paste or leave out)
    water
    3 large lettuce leaves shredded (I used green oak but you can use any...or baby spinach or alfalfa)
    1 tomato chopped.
    (Could add flaked almonds or nutritional yeast as a sprinkle)

    Recipe



    Heat about 1/3 oil. Add chopped eggplant and stir. Add taco seasoning. Whenever it looks too dry add more oil.

    Grate carrot and add in. Slice mushrooms and add. Keep on adding oil if it needs it. Fry 1-2 minutes.

    Turn heat right up and pour in wine. Stir and let it bubble and cook down a bit. Add a s[lash of water and the pasta sauce (can wash out the jar with some water and add).

    Cook about 15-20 minutes until some of the water has evaporated.

    Grill the taco shells until hot and pile on lettuce, tomato and eggplant mix. Enjoy

    (you could also garnish this with chopped fresh coriander (cilantro). If the eggplant mix seems too liquid you could mix through some refried beans or cooked, mashed kidney beans)
