Recipe Introduction
You could vary this. If you don't have eggplant, use mushrooms or sweet potato, anything really filling. Mix turtle beans with the kidney, add some TVP instead of some of the veg. I definitely would have added a touch of liquid smoke if I had any! I normally put onions in things but one of my sons wouldn't eat that. The other balked at eggplant unless I peel it. Substitute what you need. I'd add corn too but seb might not eat it then
List of Ingredients
1 very large red capsicum (chopped roughly)
5 (you read that right) cloves garlic, chopped finely)
Olive oil
1 bayleaf (I have a tree)
2 large carrots, chopped roughly
1/2-3/4 glass dry white wine (optional)
salt (I used chili infused murray river salt but you can use salt AND fresh or dried chilli if you prefer)
1 tsp ground cumin
1 tsp ground coriander
1/2-1 tsp smoky paprika (or use sweet)
1/2 tsp celery salt (optional)
1 small bunch celery greens very finely chopped (just because they were there)
1 large eggplant peeled and very finely chopped
2 tins chopped tomatos (your own tomatoes or passata are even bettere
2 tins kidney beans, well washed (dried, soaked and boiled is even better)
small handful beetroot leaves well washed and chopped finely (optional)Recipe
Saute capsicum and onion in lots of olive oil. Add bayleaf and salt.
Stir in carrots and spices. Stir well, Turn up heat to high and add wine. Give it a good stir so it starts evaporating. Add in celery.
Cook about 7 minutes
Add eggplant and cook about 1 minute. Add a tiny bit of water if needed. Cook about 2 minutes.
Add tins tomato. Wash them out with some warm water and add that (about a total of 3/4 can). Cook on low for a long time so the house smells amazing. Add liquid smoke if you have it.
Add in kidney beans, beetroot greens and serve.
I will serve with arepas, cashew sour cream (if I can be bothered making it) or maybe a sprinkle of walnut crumbs. A spoonful of guac would also be a good topper and you could add this to brown rice, pasta, or quinoa if you feel in a carby mood!
