Braised Potatoes and Green Beans

Recipe Introduction
serves 4-6 (ot makes good leftovers). I dont always peel the potatoes if they are washed properly.
List of Ingredients
- 1/4 cup extra virgin olive oil
- 1 clove garlic, minced
- 2 pounds (about 10) medium red potatoes
- 1/2 pound green beans or broad beans (large handful)
- 1 tbs (at least) chopped parsley
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 large red onion, thinly sliced
- 1 1/2 cups veg broth (or more)
Instructions
- Peel and slice potatoes. Cut beans into 1 inch lengths. In a large heavy bottomed skillet (I have also done this in a wok) heat oil over medium heat Add potatoes. Cook, turning occasionally until lightly browned about 8 mins (when I am lazy I parboil or microwave them instead. Then they are not brown but still nice)
- Add beans, onion and garlic. Cook, stirring often about 5 minutes until onion softens. Stir in half parsley, salt and pepper.
- Pour in enough broth to just cover the veg (barely. Cover tightly, reduce hear to medium low. Cook 30-40 minutes until liquid is almost completely absorbed.
- Sprinkle with remaining parsley and serve immediately.
Final Comments
If you like the beans less cooked (I do) put them in later. But the potato needs to stew a good while.
