Brussels Sprouts and Mushroom

List of Ingredients
- 450g Brussels sprouts, halved
- 230g sliced mushrooms
- 1 small onion, chopped finely (or use shallots)
- 2-3 cloves garlic, finely chopped
- 3/4 cup veg stock (sometimes I use half white wine)
- salt and pepper
Instructions
- Heat stock (not if using wine)
- Saute onions with salt. If you dont want to use oil, add some stock to stop them sticking (I just use extra virgin olive oil because I dont give a **** how fat I am so long as I am healthy and full of energy)
- After 2-3 minutes of onion sauteing add in the garlic. give it a good stir until fragrant and set aside.
- Place sprouts in pan cut side down (if not non-stick pan use oil but I hear you, some people are afraid of oil) Cook sprouts until they begin to brown. Add mushrooms and stir for 1-2 minutes.
- Add wine and/or the veg stock. Add onions back in. Stir well, turn down heat and cover tightly.
- Cook until sprouts are tender (3-5 minutes) adding in more broth if necessary.
- Garnish with salt and pepper and as an optional twist add some grated orange peel.
