Potatoes in a wok

List of Ingredients
- 4 potatoes
- 1 onion
- 12 button mushrooms (champignons) or 6 bigger ones or 2 king mushrooms
- 3/4 cup frozen broad beans or sliced lond beans OR 1 cup fresh broad beans or long beans sliced
- 1/2-1 cup veg stock or water and salt
- 1/2 cup wine (optional)
- 1/2 tsp dried oregano
- lots of black or white pepper
- olive oil
Instructions
- Parboil potatoes (I used microwave for 7 minutes) and let cool slightly. Slice
- Slice onions and mushroom. Heat wok and stirfry onion in oil until collapsed. Add mushrooms, oregano and pepper and cook about 1 minute.
- Add more oil unless trying to be low fat and the potato slices. If enough oil fry for a while until mushrooms and potatoes start to brown, if not go directly to the next step.
- Turn heat up to full and pour in wine (if using) and stir well until it starts to evaporate. Pour in stock and stir well. Add beans
- Let cook on high about 5-10 minutes until everything is soft and stock is evaporated. As long as you think it needs more cooking keep adding more stock and letting it cook out
Final Comments
Best enjoyed with a green salad or some freshly steamed beetroot and a glass of white wine. Could also be good with corn on the cob or just on its own
