Rich tomato and sausage pasta

I actually made this for breakfast and put the leftovers in a container to reheat for lunch at uni. You could make a larger batch for your family for dinner or whatever you like. It takes a short time and minimal effort.
List of Ingredients
- 4 sausages (I used fake chikn and chive)
- 1/2 tsp fennel seeds (optional- but actually everything is optional use what you like)
- olive oil
- 3 garlic cloves (adjust as you like)
- 1/2 tin crushed or diced tomatoes (the cheap ones)
- 1/2 tsp dried chilli (adjust as you like)
- 8 black olives, pitted and chopped.
- 2 serves pasta (I used spaghetti)
Instructions
- Fry sausages in a small amount of oil. Add fennel seeds to pan so they impart flavour. Smash garlic with side of knife and chop finely (or just crush)
- Turn heat down to low and add garlic and chilli. Use spatula to cut sausages into bite-sized pieces (not too small). Stir for 1 minute
- Add 1/2 tin tomatoes and stir. Cook 3 minutes. Add finely chopped olives and a dash of water. Turn up to high and simmer for about 2 minutes.
- Cook your pasta and toss it through the sauce.
Final Comments
Ideally serve with salad, steamed greens or cauliflower but I did not and I survived.
