    This may well work with other nuts, other spices anything you like. I was not eating enough protein so I decided to use nuts similarly to how I used to use meat as a flavoursome centre of the meal and make vegetables to go with them

    List of Ingredients




    2 tbs olive oil or coconut oil (less if pan is non-stick)
    3/4-1 1/2 cups raw cashews
    1-2tsp portugese or moroccan spice mix (or make your own spice mix)
    1 finely chopped spring onion
    1/2 lemon (can try lime)

    Recipe



    Heat pan until quite hot and add in oil. Add cashews and stir constantly.

    Scatter over spice and keep stirring. As they start to brown add in the chopped spring onion.

    When they are darkening up add in the juice of the 1/2 lemon, still stirring as you squeeze. The liquid should soak in immediately and you can take the nuts off the heat but stir a little longer to prevent burning. Excellent with lentil or cauliflower curry or a green leafy or cabbage based salad.
