Fragrant Coconut Rice

List of Ingredients
2 tbs peanut oil (or use coconut)
1/2 pound onion, finely chopped (or just 1-2 onions)
2 cup long-grain rice, uncooked
1 tsp turmeric
1 tsp salt (maybe less, I'd try 1/4)
2 cup coconut milk
2/3 cup vegetable stock
2 cloves
1 cinnamon stick or cassia
2 bay leavesRecipe
Heat oil, fry onion 2 minutes. Add rice, tumeric and salt and continue to cook 2 minutes.
Add coconut milk and stock and bring mixture to boil
Stir in cloves, cinnamon and bay leaves. Turn heat as low as spossible and let rice cook undistrubed for 20 minutes. It is ready to serve when rice is cooked.
Add more stock or water if needed
