    Black Rice and Papaya salad

    Recipe Introduction


    Have to get brave and try this even though last time I had papaya I was not a fan


    List of Ingredients


    • 500g cooked black rice
    • 1/2 red papaya, peeled, seeded, finely sliced
    • 1/2 bunch asparagus (I question whether half bunch is enough) woody ends removed and thinly sliced (on the diagonal as long as possible)
    • 1 spring onion, thinly sliced
    • 1/4 cup mint leaves
    • 2 tbs sunflower seeds, toasted
    • 1 tbs brown sugar or rice syrup
    • 1 long red chilli, chopped (optional)
    • 2 tbs lime juice
    • 1/4 cup extra virgin olive oil


    Instructions


    1. Spread rice over a large serving plate and if necessary set aside to cool.
    2. Arrange papaya, asparagus, spring onion, mint and sunflower seeds over the rice on the plate.
    3. Combine rice syrup, chilli, lime juice and oil in a screw top jar, shake to combine. Season. Drizzle over salad
    4. Serve with lime wedges


    Final Comments


    Good at a barbecue. Add thin pineapple slices too if desired.
