Black Rice and Papaya salad

Recipe Introduction
Have to get brave and try this even though last time I had papaya I was not a fan
List of Ingredients
- 500g cooked black rice
- 1/2 red papaya, peeled, seeded, finely sliced
- 1/2 bunch asparagus (I question whether half bunch is enough) woody ends removed and thinly sliced (on the diagonal as long as possible)
- 1 spring onion, thinly sliced
- 1/4 cup mint leaves
- 2 tbs sunflower seeds, toasted
- 1 tbs brown sugar or rice syrup
- 1 long red chilli, chopped (optional)
- 2 tbs lime juice
- 1/4 cup extra virgin olive oil
Instructions
- Spread rice over a large serving plate and if necessary set aside to cool.
- Arrange papaya, asparagus, spring onion, mint and sunflower seeds over the rice on the plate.
- Combine rice syrup, chilli, lime juice and oil in a screw top jar, shake to combine. Season. Drizzle over salad
- Serve with lime wedges
Final Comments
Good at a barbecue. Add thin pineapple slices too if desired.
