The author advises "you could change the beans, maybe chickpeas, fava, white beans, mung beans, whatever get’s your taste buds tingling. I used rocket, but you could swap that for spinach leaves if you prefer," which is my philosophy too. Chop and change.
List of Ingredients
3 – 4 packed cups of fresh rocket
1 can borlotti beans, drained and rinsed (approx 1 ¾ cups)
1 cucumber diced
1 orange pepper (capsicum) chopped
½ red onion finely chopped
1 cup shredded red cabbage
8 cherry tomatoes, quartered
Seeds from ½ a pomegranate
¼ cup of sliced black olives
½ cup pickled beetroot
Pickled peppers to serve
3 tbsp hummus
Dressing
1 tsp fresh lemon juice
2 tbsp Balsamic Vinegar
1 tsp wholegrain vinegarRecipe
. In a large mixing bowl combine the first 7 salad ingredients and toss together using your hands, then just take big handfuls and place on your serving plate before piling on the olives, beetroot and pomegranate seeds, place a few pickled peppers on the side.
2. For the dressing, whisk all 3 ingredients together and drizzle over the 2 plates before finishing off the salad with a big dollop of hummus and a big old pinch of black pepper.
