    Four-bean salad with salsa verde

    Serves 2 (or makes 2 lunches). Leave our or substitute anything you don't have.


    List of Ingredients


    • 1 tin 4-bean mix, drained and washed
    • 1-2 spring onion or 1/4 red onion
    • Handful parsley leaves
    • Very small handful basil leaves
    • Very small handful mint leaves
    • a squeeze of lime
    • 1 tsp dijon mustard
    • salt and pepper
    • olive or walnut oil (small amount)
    • 1/2- 1 tbs capers, chopped finelyy
    • 1 small lebanese cucumber (or equivalent proportion of a large cucumber)
    • 12 cherry tomatoes (or equivalent large tomato)
    • 16 dark purple grapes halved (optional)
    • 3 small radishes sliced (optional)
    • any other sald veg you can't live without.


    Instructions


    1. Chop herbs finely and mix with capers, mustard, lime juice (or use vinegar), olive oil, salt and pepper. Toss four bean mix through this dressing. Add quartered tomatoes, diced cucumbers, halved grapes and sliced radishes (or whichever of those you have)
    2. Best eaten a few hours later when all flavours have infused into each other.
