Recipe Introduction
I like the lighter feel of a lemon dressing, but you could also use the more traditional mayonnaise (vegan of course) with or without mustard OR add enough tahini or cashew milk to the dressing to make it creamier.
saves 1 but add more to make more
List of Ingredients
- 1 cup salad leaves of your choice
- 1/2-1 lebanese cucumber
- 2-3 celery sticks
- 1 sweet apple
- 1/4 cup pecans or walnuts
- 1 tbs dijon mustard (any mustard is good but dijon is the best for this)
- juice of 1/2 lemon (if you only have lime use lime. Can also use cider vinegar if need be)
- a lot of pepper
- 20 drops sesame oil
- 1/4 cup olive oil (or use nut cream)
Instructions
- Mix mustard, lemon juice, tahini if using (or oil) and salt and pepper together
- Toss all other veg together and pour over dressing
Final Comments
For a heartier meal add brown rice or quinoa. A lot of people like green or red grapes with this. I also add other things when I am in the mood- radish, orange, capsicum or avocado)
