1 tin peaches, cut into bite sized pieces
1/2 - 1 red onion, finely diced
red chilli to taste (deseeded best)
chopped coriander (cilantro)
lime juice

A variation I have tried is using one or more fresh mangoes instead of the tin of peaches. They need to be cut into chunks. I imagine pineapple or sweet corn would be acceptable alternatives too
