Tomato and Mushroom Salsa

Serve with corn chips or on gluten free toast
List of Ingredients
2 cloves garlic, finely chopped
2 spring onions, finely sliced
2 swiss brown mushrooms, whole
1 tbs olive oil
4 large ripe tomatoes, diced
1 tbs fresh basil, finely choppedRecipe
Heat oil in frypan. Add garlic and spring onion then mushrooms and tomatoes.
cook 5-6 minutes on medium. Add fresh basil and season with black pepper.
serve warm.
