Brussels Sprout "Quesadilla"

I was mainly happy to give up dairy, but U was sad to be giving up quesadillas.I admit that a real quesadilla (as the name implies) would have cheese. Nevertheless this is delicious! Serves 1
List of Ingredients
- 1 gluten free tortilla or wrap (or 2 depending on size, I had very small ones so I used 2)
- 1 shallot, chopped finely
- 5 brussels sprouts, finely sliced or shredded
- 2 cloves garlic, finely chopped (can use them whole if you prefer)
- 1/2 tsp smokey paprika (it seems like a lot but adds a great flavour)
- 1 tbsp finely chopped parsley
- 1 tsp dijon mustard
- 1 tbs hummus (I used pine-nut hummus cause it's what I had but that or normal is fine)
- 1 tbsp olive oil
- 1 pinch sea-salt
Instructions
- Saute the shallots 2 min in olive oil. Add brussels sprouts and stirfry for 3 minutes until beginning to wilt around edges.
- Add salt and garlic cloves and cook for 2-3 minutes. Add paprika. Mix thoroughly so everything infuses. Add in the parsely.
- Heat the grill (or a pan) Spread mustard over the whole tortilla and hummus over half. Add Brussels sprouts mix.
- Fold in half and cook as a quesadilla (one side then flip OR use a press that cooks both sides at once)
- Cut in 3 triangles (folded over quesadilla) or 6 (for a whole one) and serve. Good with a glass of dry white or mineral water. Probs good with gluten free beer too!
Final Comments
I didn't have shallot so I used a small onion. I didn't have parsley so I left it out. It would be ok to use coriander instead if you had it.Sometimes I would add powdered kale but today I had had so much kale I didn't
