Cold Be-gone soup

Serves 4 (or makes good leftovers)
List of Ingredients
- 1 onion or leek
- 2-6 cloves garlic
- 1/2-1cm ginger (optional)
- olive oil
- 1-3 carrots
- 1-3 sticks celery
- 1 bayleaf (optional)
- 1-3 cups vegies (eg mushroom, zucchini, broccoli, capsicum, corn, bok choy, spinach or whatever you like)
- salt, pepper, dried herbs
- 1/4 cup dry white wine (optional or use 2 tbs vinegar instead or nothing)
- 2-4 cups veg stock or water
- cooked noodles or rice (optional)
- firm tofu cu into small pieces (optional)
- seaweed, optional
- 1-2 chilli chopped (remove seeds unless you want it very hot- optional)
Instructions
- Heat olive oil and saute onion, garlic, ginger, carrot and celery. Add chilli if using
- Add hard veggies that need a lot of cooking (eg mushroom). Add herbs and spices, stir well. Add wine if using.
- Add stock or water, bring to boil, cover and cook on low until veggies cooked.Add leafy veg for last 2 minutes
- Spoon into bowls over noodles and tofu (if using)
Final Comments
You can spice it up in the bowl with spring onion, sesame oil, sriracha sauce, coriander leaves and/or soy sauce.
