leek, Lemon and Lentil Soup

500g dried brown lentils
cooking oil (I will use olive or coconut)
chilli flakes (optional)
3 L veg stock (or use stock powder and water)
2 leeks
salt and pepper to taste
juice of 4 lemonsRecipe
Leek, Lemon, and Lentil Soup
In a big soup pot fry brown lentils for a few minutes in some oil and spices/herbs. I like to make this somewhat spicy with chilli flakes. I think I use around 500g of lentils? This recipe is better with dried lentils rather than precooked ones.
Add heaps of whatever stock you prefer - I'd estimate I use around 3L of chicken or vegetable stock. Bring to the boil then simmer until the lentils are soft.
Fry a couple of leeks (I like to use heaps of butter but obvs oil works too) in a frying pan. Add the fried leeks to the lentils.
Season as you like. Add lemon juice (about 4 lemons worth?) before serving.
This is such a delicious, hearty soup, and the lemon gives it that light tang that balances out the lentils.
