Stirfry Mushrooms

serves 3 or serves just me and makes two leftovers for work
List of Ingredients
- 250g cup mushrooms (normal mushrooms)
- 250g pearl mushrooms
- 1 -2 spring onions
- 2 cloves garlic
- 1 head broccoli OR large handful spinach or silverbeet
- 2 tbs oil (I use olive, some use coconut or canola)
- large pinch dried chilli (optional or use black pepper instead)
- 3tbs soy sauce
- a few drops sesame oil
Instructions
- Finely chop garlic, slice both types mushrooms and cut broccoli into bite sized pieces (or shred spinach leaves)
- Heat oil in wok. add garlic and stirfry 20 seconds. Add in mushrooms and sesame oil and keep stirring
- Add chilli. When mushrooms nearly done add soy sauce and green (earlier if using broccoli) and keep stirring until all cooked through.
- Serve with rice, quinoa or vermicelli
Final Comments
Can add a squeeze of lime as serving to change flavour slightly. Can sprinkle with sesame or LSA. Can use toasted or dry-fried cashews or almonds in this if liked.
