    serves 3 or serves just me and makes two leftovers for work


    List of Ingredients


    • 250g cup mushrooms (normal mushrooms)
    • 250g pearl mushrooms
    • 1 -2 spring onions
    • 2 cloves garlic
    • 1 head broccoli OR large handful spinach or silverbeet
    • 2 tbs oil (I use olive, some use coconut or canola)
    • large pinch dried chilli (optional or use black pepper instead)
    • 3tbs soy sauce
    • a few drops sesame oil


    Instructions


    1. Finely chop garlic, slice both types mushrooms and cut broccoli into bite sized pieces (or shred spinach leaves)
    2. Heat oil in wok. add garlic and stirfry 20 seconds. Add in mushrooms and sesame oil and keep stirring
    3. Add chilli. When mushrooms nearly done add soy sauce and green (earlier if using broccoli) and keep stirring until all cooked through.
    4. Serve with rice, quinoa or vermicelli


    Final Comments


    Can add a squeeze of lime as serving to change flavour slightly. Can sprinkle with sesame or LSA. Can use toasted or dry-fried cashews or almonds in this if liked.
