Amazing beetroot

You can eat this warm as a side dish with your meal or have it on a tapas plate as a snack or even throw it in a salad (I am thinking couscous or rocket...things like that)
List of Ingredients
- I bunch beetroot
- 1 tbs canola oil (or any cheap oil you don't mind)
- generous pinch salt (I had some Murray salt that someone gave me as a gift but even normal salt)
- 1 pinch pepper or small pinch dried chilli (optional)
- 1/2 tsp ground cinnamon
- 1/2-3/4 tbs cider vinegar
Instructions
- Preheat oven to about 200C. Peel beetroot and cut into wedges. Reserve the leaves in a bowl of cold water...you can eat them another time.
- Toss beetroot in roasting pan with salt, pepper, cinnamon and oil. Roast about 15 minutes.
- Stir. If it looks like it needs more give it about 10 mins more until it smells delicious and is nearly cooked.
- Toss apple cider vinegar through the oil in the pan and toss the beetroot to make sure flavours mix and meet each other.
- Give them another 5 minutes in the oven.
- Drain well before packing to share at your picnic or quiz night or whatever
