    Herbed beans

    inspired by a Middle Eastern restaurant but I made it up

    List of Ingredients


    • 2 cups dried beans- I used kidney beans but can use fava, adzuki, chickpeas or a mix whatever you like
    • Water to soak and boil
    • Veg stock powder or salt. Bayleaf optional
    • I bunch parsley (stalks ok)
    • small handful basil leaves
    • 1 small handful mixed lettuce (mine had a small bit of rocket in it which was nice)
    • salt
    • Olive oil
    • 2 lemons
    • 3 cloves garlic
    • chopped tomatoes (about 4 but depends on the size of them)


    Instructions


    1. Soak beans about 8 hours (or more). Drain and rinse. Put with fresh water in a saucepan. Add veg stock powder or salt and bayleaf. Bring to boil and then simmer about 1 hr until tender. Cool in fridge (I went overnight but you don't have to

    2. In a blender whizz the garlic and herbs with a drizzle of oil and the juice from both lemons. When it needs more liquid (and it will) add some cooking water from the beans.

    3. Mash the beans with a potato masher (can be rough and only slightly smashed up). Spoon beans in a bowl, top with chopped tomato and drizzle over sauce. ENJOY



    Final Comments


    You can be healthy and just drink still or sparkling water with this...but if you are doing it for a lovely lunch/brunch I suggest a dry chardonnay or some dry cider with it. Or a champagne but once again NOT a sweet one. On the other hand for a work lunch just make up as for a bowl but in a lunchbox with a lid. Bring a fork or spoon
