    Crockpot Pork Stew

    This is the easiest way to make stew for those long cold nights - you just want to get a cup and sit by the fire with.

    List of Ingredients




    1 Tbsp. oil
    1.5 pounds boneless pork loin, cut into 1 inch cubes
    1/2 pound baby carrots
    1/2 pound new potatoes, quartered
    1 red bell pepper, seeded and chopped
    1 16 oz. package frozen mixed vegetables
    1 8 oz. can whole baby corn, drained
    1 tsp. black pepper
    1 can reduced-sodium chicken broth
    1 packets brown gravy mix

    Recipe



    Heat oil in skillet over medium-heat. Add pork cubes and brown.

    In a large bowl, combine pork and remaining ingredients, except broth and gravy mix. Pour into crockpot.

    Combine broth and gravy mix and pour over ingredients in crockpot. Cover; cook on Low 8 to 10 hours (High: 4 to 5 hours).
