Fresh Plum Kuchen

1 3/4 cup flour
1/4 cup sugar
1/2 tsp salt
1/2 cup butter (1 stick)
6-10 Italian Plums (small ones) split in half with knife......pit removed and skins pricked with a fork.
3/4 cup sugar
1 tsp. cinnamon
2 egg yolks
1 cup heavy cream (small carton)

Procedure
To make crust...
Sift flour, sugar and salt and cut in butter with a pastry bleneder or a fork. Try not to overwork the crust or it will get tough. Pack into a greased 9 by 9 by 2" round pie pan. Now place your plums in rows skin side up . In a bowl mix sugar and cinnamon together and sprinkle mixture over plums. Bake at 400 degrees for 15 minutes.
In another bowl beat egg yolks. Stir in heavy cream.....set aside. Remove crust from oven. Lower temperature to 350 degrees and pour cream mixture evenly over the plums. Return to oven for another 30 minutes until cream mixture is set. Remove from oven and cool
