    Broiled Lobster with Crab Stuffing

    List of Ingredients

    2 live lobster (approx. 1 1/2 lbs each)
    250 ml (1 cup) crab meat
    1 clove garlic, minced
    1/2 medium white onion,finely diced
    5 ml (1 tsp) parsley, chopped
    5 ml (1 tsp) thyme, stemmed and finely chopped
    3 3/4 (1/4 tsp) tarragon
    15 ml (1 tbsp) olive oil
    250 ml(1 cup) White Rice

    Mango Salsa:
    1 small red onion, minced
    1 red bell pepper, seeded and diced
    125 ml (1/2 cup) cilantro, finely chopped
    5 ml (1 tsp) olive oil
    1 mang, diced
    60 ml (1/4 cup) Balsamic Vinegar
    30 ml (2 tbsp) melted butter
    750 ml (3 cups) mixed fresh vegetables such as asparagus or green beans

    Recipe

    Procedure

    1. Bring a large pot of salted water to a boil. Cook lobsters for 7 minutes.

    2. Turn the lobstersonto their backs. With a sharp knife, split down the center. Remove the brain and stomach and discard. Remove lobster tail meat and reserve. Crack claws with flat side of knife.

    3. In a large bowl, mix crab meat, lobster meat garlic, onion, herbs and olive oil. Season with salt and pepper.

    4. Meanwhile, cook the rice according to package directions and then fluff with a fork.

    5. In a medium bowl, mix red onion, red pepper, cilantro oil, mango and balsamic vinegar. Add rice. Reserve until ready to serve.

    6. Place the lobster tail back into the cavity and stuff with the crab/lobster mixture. Pour butter over the stuffing. Place in a 180 C (350 F) oven for approximately 5 minutes. Transfer to broiler for an additional 2 - 3 minutes or until just slightly browned. Serve with rice and mango salsa and vegetable of your choice.
