    Pork Spice Rub/Coriander-Lime Mayonnaise

    Pork Spice Rub:
    2 tbsp paprika 30 mL
    1 tsp ground black pepper 5 mL
    1 tsp coarse salt 5 mL
    1 tsp chili powder 5 mL
    1/2 tbsp brown sugar 7 mL
    pinch cayenne pinch
    1 pork tenderloin, about 1 lb (500 g)

    Coriander-Lime Mayonnaise
    1/3 cup Hellmann's Real or Light Mayonnaise 175 mL
    1 clove garlic, minced 1
    2 tbsp chopped fresh coriander 30 mL
    1 tsp fresh lime juice 5 mL


    Recipe

    Preheat grill. In a small bowl, combine paprika, pepper, salt, chili powder, brown sugar and cayenne. Rub spice mixture over entire surface of pork tenderloin; set aside.

    In a bowl, mix together mayonnaise, garlic, coriander and lime juice; set aside. Grill pork over medium heat, turning regularly, 25 minutes or until internal temperature reaches 150° F (65° C) on a meat thermometer. Let pork sit covered five minutes before serving. Slice pork against the grain and serve with Coriander-Lime Mayonnaise for dipping.
