    Serves 4. 5 pts. per serving.


    List of Ingredients


    • 4 cups (20-oz.) unpeeled potatoes, thickly sliced
    • 8-oz. ground 90% lean ground turkey or beef
    • 1 cup chunky salsa
    • 1/4 cup FF sour cream
    • 1/2 cup (2-1/4-oz.) RF shredded cheddar cheese


    Instructions


    1. Preheat oven to 350 degrees. Place potatoes in an 8x8-inch baking dish. Spray potatoes with butter flavored cooking spray. Bake until tender, about 30 to 45 minutes.
    2. In a skillet sprayed with olive-flavored cooking spray, brown meat. Stir in salsa. Lower heat and simmer meat until meat and potatoes are cooked through.
    3. When serving, place 1/4 of potatoes on each serving plate. Spoon mixture evenly over potatoes. Top each with 1 T. sour cream and 2 T. cheddar cheese.
