Good use for leftover roast beef
List of Ingredients
½ cup chopped onion
2 full cups diced roast beef
1 cup (8oz can) carrots, rinsed and drained
½ cup frozen peas, thawed
1/3 cup diced cooked potatoes
1 (12oz) jar Heinz Fat Free Beef Gravy
1 tsp dried parsley flakes
½ tsp black pepper
1 (7.5oz) can Pillsbury refrigerated biscuits
Recipe
Preheat oven to 425°. Spray an 8x8 baking dish with cooking spray. In a large skillet sprayed with cooking spray sauté onions for 5 minutes. Stir in roast beef, carrots, peas and potatoes. Add gravy, parsley flakes and black pepper. Mix well to combine. Bring mixture to boil stirring occasionally. Spoon mixture into prepared baking dish. Separate biscuits and cut into 4 pieces and sprinkle evenly over hot meat mixture. Bake for 15 to 20 minutes until biscuits are done
