Stuffed Baked Fish

Recipe Introduction
Serves 4. 2 pts. per serving.
List of Ingredients
- 1/2 cup chopped onion
- 4 slices reduced-calorie white bread, crumbled
- 1 tsp. dried basil
- 1/8 tsp. black pepper
- 4 (2-oz.) white fish fillets
- 2 tsp. reduced-calorie margarine
- 1/2 tsp. paprika
Instructions
- Preheat oven to 400 degrees. SPray 8x8-inch baking dish with butter-flavored cooking spray.
- In a large skillet sprayed with butter-flavored cooking spray, saute onions until tender. Add bread crumbs, basil and black pepper. Mix well.
- Layer stuffing mixture evenly in baking dish. Place fish fillets on top of stuffing. Melt margarine and drizzle over fish. Sprinkle paprika on top.
- Bake 15 to 20 minutes or until fish flakes easily.
Final Comments
Hint: Use day-old or slightly dried bread. It makes good crumbs.
