    List of Ingredients


    • 1 cup potatoe flakes
    • 2/3 cup hot water
    • 1/3 cup fat free sour cream
    • 1 tsp dried parsley flakes
    • 1/2 cup chopped onion
    • 1/2 cup chopped green peppers
    • 1/2 cup + 1 TBSP dried bread crumbs
    • 1 tsp chili seasoning
    • 1 cup tomato sauce
    • 1 lb 90 % lean ground beef
    • 1/3 cup reduced fat shredded cheddar cheese
    • 1 TBSP brown sugar twin


    Instructions


    1. Preheat oven to 350*;
    2. Spray a 9x5 loaf pan or 6 large muffin cups;
    3. In a bowl combine potatoe flakes, water, sour cream and parsley; mix well and set aside;
    4. In another bowl, combine onion, green peppers, bread crumbs, chili seasoning, and 1/3 cup of tomato sauce.
    5. Add meat and mix well.
    6. Pat half the meat mixture in the bottom of the pan;
    7. Pour the potatoe mixture over the meat mixture;
    8. Pat rest of meat mixture on top.
    9. Stir cheddar cheese, brown sugar twin, and remaining tomato sauce together.
    10. Spoon over top of the meatloaf
    11. Bake covered with tin foil for about 1/2 hour and check to see if meat is no longer pink. Might need to go more like 45 minutes with the potatoe in the center.

    Recipe said this made 6 servings at 5 points per serving. Add a veggie to complete the meal.
