Serving is 1 cup and 3 pts per serving. Very nice, light and fresh recipe.
List of Ingredients
- 1 (9-oz) package refrigerated low-fat cheese tortellini
- 1(9-oz) package frozen broccoli cuts
- 2 1/2 cups quartered cherry tomatoes
- 1/4 cup chopped fresh basil leaves
- 1 tbsp. fresh grated Paremsan or Romano cheese
- 1 1/2 tsp. olive or vegetable oil
- 4 medium green onions, sliced (1/4 cup)
- 2 medium garlic cloves, minced
- salt and freshly ground pepper to taste
Instructions
- Cook tortellini according to package directions, adding frozen broccoli during last 2 to 3 minutes of cooking time; drain thoroughly and return to saucepan or place in serving bowl.
- Add remaining ingredients except salt and pepper; toss gently. Sprinkle with salt and pepper, if desired.
