    These freeze well to make and have for your lunches

    List of Ingredients




    8 oz or 1 ½ cups cooked shredded chicken
    8 oz jar of salsa
    16 oz fat free refried beans
    jalapeno peppers to your taste (chopped or sliced)
    3 T onion, chopped
    1 cup reduced fat cheddar cheese (I use the fat free cheddar KRAFT)
    8-8” low fat tortillas

    Recipe



    In a skillet sprayed with cooking spray add chicken, salsa, beans, jalapenos and onion. Cook and stir over medium hat till mixture is smooth. Add cheese and stir.

    Wrap and heat tortillas in the oven for 10 minutes at 350°. Take out and let cook for a minute. Add ½ cup of meat mixture to each tortilla then wrap and then place in a baking dish sprayed with cooking spray. Bake until the tortillas are crisp.
