    Makes 4 servings at 6 pts per serving.


    List of Ingredients


    • 1 T. olive oil
    • 1 tsp. finely chopped garlic
    • 4 boneless, skinless chicken breasts (about 1-1/4 lbs.)
    • 1/4 tsp. salt
    • 1/4 tsp. pepper
    • 1 far (12-oz.) ff chicken gravy
    • 1 bag (1-lb.) frozen broccoli, carrots and cauliflower mix
    • 1/2 cup grape or cherry tomatoes, halved


    Instructions


    1. In 12-inch skillet, heat oil over medium heat. Add garlic; cook 1 to 2 minutes, stirring frequently. SPrinkle chicken with salt and pepper; add to skillet. Cook 15 to 20 minutes, turning once, until chicken is no longer pink when centers of thickest pieces are cut. remove chicken from skillet; cover to keep warm.
    2. In same skillet, mix gravy, frozen vegetables and tomatoes. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are crisp-tender.
    3. Return chicken to skillet; cover and simmer about 2 minutes or until chicken is throughly heated.
