    Fried Tomatoes with Mushroom Sauce

    Recipe Introduction


    Serves 6 (scant 1/2 cup). 2 pts. per serving.


    List of Ingredients


    • 6 T. flour
    • 1/4 tsp. lemon pepper
    • 4 fresh medium red tomatoes, sliced
    • 1 T. + 1 tsp. reduced-calorie margarine
    • 1 (10-3/4-oz.) can RF low sodium Cream of Mushroom soup
    • 1 T. fresh basil, chopped or 1 tsp. dried basil


    Instructions


    1. In a saucer, combine flour and lemon pepper. Dip tomato slices in flour mixture.
    2. Melt margarine in a large skillet. Place tomato slices in skillet. Cook tomatoes over low heat until lightly browned on both sides. Remove to a heated platter.
    3. Stir mushroom soup and basil into skillet. Heat. pour sauce over tomatoes. Serve immediately.
