Easy Pierogies and Peppers

4 pierogies & 1/2 cup of sauce equals 4 pts. As long as you use the low fat Mrs. T's Pierogies.
List of Ingredients
- 1 lb. bag frozen tri-color pepper stir fry
- 1 package Mrs. T's Low Fat Potato & Onion Pierogies
- 1 (8-oz.) can tomato sauce
- 1 tsp. dried oregano
- 2 tsp. fennel seed, toasted & ground
- 1/2 tsp. salt
- 1/2 tsp. coarsely ground pepper
Instructions
- Spray a large nonstick skillet with nonstick spray and set over high heat. Add the pepper stir-fry and saute until lightly browned, 10 - 12 minutes. At first the frozen peppers and onions will give off water, but continue cooking them until the water evaporates and they brown lightly.
- Meanwhile, cook the pierogies in boiling water until thawed, 3 - 5 minutes. Drain, reserving 1/4 cup of the cooking liquid. Keep the pierogies warm.
- Add the reserved cooking liquid, the tomato sauce, oregano, fennel, salt and ground pepper to the pepper stir-fry, and simmer 1 minute. Serve the pierogies with the sauce.
- NOTE: To toast and grind the fennel seeds, place them in a small dry skillet over medium-low heat. toast, shaking the pan and stirring constantly, until lightly browned and fragrant, 2 - 3 mnutes. Watch them carefully when toasting, seeds can burn quickly. transfer seeds to a spice grinder and grind to a powder. Or grind with a mortar and pestle. Or pound the seeds between 2 clean kitchen towels with a mallet until finely crushed.
