    1 box yellow cake mix
    Milk of one coconut
    1/4 cup finely chopped fresh coconut

    Make cake according to package instructions using coconut milk as part of the water. Add chopped coconut. Pour into 2 round cake pans and bake. Cool layers on a rack.
    When cool frost with icing*. Spread icing and sprinkles of coconut between layers. When cake is frosted, cover with coconut. Store in refrigerator until about 1/2 hour before serving.

    *Icing
    5 tablespoons flour
    1 teaspoon vanilla
    1 cup milk
    1 cup butter
    1 cup powdered sugar

    Cook flour and milk together, cover and allow it to cool. Cream sugar and butter and add vanilla. When flour mixture is cooled, add it to the sugar mixture and beat well.
