    Apple Cheddar Bread

    List of Ingredients




    Makes 1 9" loaf, or 3 or 4 mini loaves; can be multiplied

    2 cups flour
    1 and 1 half teaspoons baking powder
    1 half teaspoon soda
    1 teaspoon salt
    8 Tablespoons soft butter
    2 3rds cup sugar
    2 eggs
    1 apple, unpeeled, cored and coarsely grated
    1 half cup sharp Cheddar cheese, grated

    Preheat oven to 350. Grease and lightly flour preferred pans
    In a mixing bowl, sift together the flour, baking powder, soda and salt. Set aside. Cream together the butter and sugar until light. Add the eggs to the butter-sugar mixture, one at a time, beating well after each addition. Add the apple and cheese to the butter mixture. Add half the dry ingredients, mixing to moisten the flour. Repeat with remaining dry ingredients. Spoon into prepared pan(s). Bake a large loaf for about 1 hour. Smaller loaves will take 30 - 40 minutes. A knife inserted in the center of the loaf will come out clean. Cool in pan(s) on a rack for 10-15 minutes. Turn bread out onto racks and cool thoroughly before wrapping and freezing.
